How do I teach composting?

In January I will be going to Mexico for an annual service trip. This year I have been assigned the composting project- I will teach one of the local villagers how to implement composting on his land, and he will pass the info to the rest of the village over time.
Most families grow corn and perhaps a few other vegetables or fruits, and raise chickens, goats, and/or sheep. Some have horses or donkeys.
How can I effectively communicate this process? Keep in mind, I am just learning about it myself, so I am no expert. Any advice, guidelines, info, or descriptions would be appreciated!
